Zucchini Carrot/Apple Bread

Ingredients
  • 2 cups sugar
  • 1 cup butter or oil
  • 3 eggs
  • 1/4 cup fresh orange juice
  • 2 1/2 tsp vanilla
  • 3 1/4 cups flour
  • 1/2 tsp salt
  • 2 1/2 tsp baking powder
  • 3/4 tsp baking soda
  • 2 1/2 tsp cinnamon
  • punch of cloves
  • 1 cup zucchini (unpeeled, shredded)
  • 2 carrots (shredded)
  • 1/2 cup yellow raisins
  • 1 cup apples (peeled, diced)
  • 1/2 cup walnuts

  • Frosting (if desired):
  • 1/2 cup cream cheese
  • 1/4 cup butter
  • 2 cups powdered sugar (to taste)

Steps
  1. Blend sugar, butter, eggs, orange juice, and vanilla.
  2. Stir flour, salt, baking powder, baking soda, cinnamon, and cloves together.
  3. Fold into wet batter along with carrots, zucchini, raisins, apples, and nuts.
  4. Spoon into greased and floured pans.
  5. Will fill 2 8x4" loaf pans or 1 bundt pan, or 18-24 muffins.
  6. Bake 350° about 1 hour or until done.
  7. If desired, make frosting. Blend ingredients together. Add powdered sugar and orange juice as needed to make a soft frosting. Can frost top or drip down sides.
  8. Can sift powdered sugar and cinnamon over top
