Whole Wheat Bread

350° - 45 minutes; 4,000 ft elevation 425° 8 minutes then 350° - 30 minutes
Ingredients
2 TBSP dry yeast
1/2 cup warm water
5 cups hot tap water
12 cups whole wheat flour
2 TBSP salt
2/3 cup oil
2/3 cup honey or raw sugar

Steps
Sprinkle yeast in 1/2 cup warm water. Let stand 15-20 minutes.
Combine hot tap water and 7 cups wheat flour in mixer. Mix on low speed until blended.
Add salt, oil, and honey. Continue to mix until well blended. Add 1 cup flour. Mix and add 3-4 more cups flour.
Knead for 10 minutes on low speed or until dough cleans sides of bowl.
Oil hands; divide dough in half. Mold loaves on oiled counter.
Place in oiled pans. Oil tops. Cover with damp cloth and let rise 1/3 inch bulk - 35 minutes.
Bake 350° for 40-45 minutes. If above 4,000 feet elevations, bake at 425° for 8 minutes and then 350° for 30 minutes.
Remove from pans. Cool. Brush tops with butter.
