White Chocolate Cookies

Ingredients
  • 1/2 cup butter (room temperature)
  • 1/2 cup sugar
  • 1/2 cup brown sugar (packed)
  • 1 1/2 tsp vanilla
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1 egg
  • 1 1/4 cup flour
  • 1/4 tsp soda
  • 1 cup coconut
  • 1 cup oats - quick cooking
  • 1 cup dried cranberries, cherries, or raisins
  • 1 cup white chocolate chips

Steps
  1. In bowl, whisk together flour, baking powder, soda, and salt.
  2. In large bowl, beat butter with electric mixer on medium speed until fluffy. Add sugars, beat until combined. Beat in egg and vanillas. Scrape sides.
  3. On low speed, slowly add flour mixture; mix.
  4. Still on low speed, add oats, coconut, dried cranberries, and white chocolate.
  5. Drop dough by rounded tablespoons 2" apart onto parchment lined cookie sheet pressing down onto the tops of each cookie.
  6. Bake 8-10 minutes or until edges are golden brown.
  7. Cool on wire rack. Enjoy!
