Tropical Cream Cake Fillings (two flavors)

Ingredients
  • 4 tsp gelatin
  • 2 cups sweetened whipped cream
  • 2 TBSP pineapple juice
  • 1 cup pureed apricot pulp
  • 1 cup drained crushed pineapple (tinted green)

Steps
  1. For each of the fillings, soften 2 tsp gelatin in 1 TBSP fruit juice (pineapple and apricot).
  2. Dissolve over hot water. Stir into the fruit. Chill.
  3. When partially set fold in 1 cup sweetened whipped cream to each fruit filling.
