Ingredients
- 1 - 10x5x3 loaf angel cake
- 1 pint heavy cream
- 1 TBSP sugar
- 1 tsp vanilla
Steps
- Cut cake lengthwise into 3 layers.
- First layer = spread pineapple filling!
- Add 2nd layer and spread with apricot filling
- Top with 3rd layer.
- Whip cream, adding sugar and vanilla. Spread on top and sides of cake.
- Garnish with plain or tinted coconut, pineapple rings and mint leaves.
