Thumb Print Cookies

Ingredients
  • 1/2 cup butter
  • 1/4 cup brown sugar
  • 1 egg yolk
  • 1/2 tsp vanilla
  • 1 cup sifted flour
  • 1/4 tsp salt
  • 1 egg white
  • 1 1/2 cup nuts (chopped)

Steps
  1. Cream butter, then add sugar, yolk, and vanilla.
  2. Gradually add flour. Roll in 1" balls and dip into slightly beaten egg whites.
  3. Roll in nuts. Place 1" apart on ungreased baking sheet.
  4. Bake at 375° for 5 minutes. Remove from oven and gently press thumb into each cookie.
  5. Return to oven and bake 10 minutes or more.
  6. When ready to serve, fill center with red jelly or icing. Can be frozen - plain and filled at the last minute to serve.
  7. Makes about 2 1/2 dozen.
