Thai Chicken Pizza

Ingredients
  • Peanut Sauce:
  • 1/4 cup balsamic vinegar
  • 2 1/2 TBSP sugar
  • 2 TBSP brown sugar
  • 2 TBSP soy sauce
  • 1/2 tsp crushed red pepper
  • 1/8 tsp coarse salt
  • 1 fresh garlic clove, crushed
  • 2 TBSP chunky peanut butter

  • 2 pizza dough balls
  • 2 TBSP olive oil
  • 2 garlic cloves, crushed
  • 1 cup chiclken breast, cooked and torn into pieces
  • 1 Mozzarella cheese
  • 1 shredded carrots
  • 1 sliced red onion
  • 1/4 cup cilantro leaves
  • 1/2 cup whole peanuts

Steps
  1. Sauce: In a small saucepan over medium heat, bring vinegar, sugars, soy sauce, red pepper, salt, and garlic to a boil stirring frequently. Remove from heat. Whisk in the peanut butter. Set aside. Sauce should be slightly warm when spread on pizza.
  2. Roll out pizza dough. Mix olive oil and garlics together and brush entire pizza dough and then spread on peanut sauce.
  3. Spread out chicken and cheese. Then sprinkle carrots and onions.
  4. Bake and then sprinkle with cilantro and peanuts.
Tips
There will be extra sauce - sprinkle it on top of your cooked pizza!
