Strawberry Crepes

Ingredients
  • Crepes:
  • 4 large eggs
  • 1 cup milk
  • 1 cup cold water
  • 2 TBS melted butter
  • 1/4 tsp salt
  • 2 cups flour

  • Filling:
  • 1 pkg (8 oz.) cream cheese, softened
  • 1 1/4 cup powdered sugar
  • 1 TBSP lemon juice
  • 1 tsp grated lemon peel
  • 1/2 tsp vanilla
  • 4 cups fresh strawberries, sliced and divided
  • 1 cup heavy whipping cream, whipped

Steps
  1. Mix crepe ingredients together and imulsify. Refridgerate for at least one hour.
  2. Beat cream cheese with sugar, lemon juice and zest. Add vanilla. Folding strawberries and whipping cream.
