Spice Cake

Ingredients
  • 2 1/2 cups cake flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • 3/4 cup shortening or butter
  • 3/4 cup milk
  • 1 tsp vanilla
  • 1 2/3 cup brown sugar
  • 3 eggs (unbeaten)

  • Frosting:
  • 1/2 cup butter or margarine
  • 1/6 tsp salt
  • 3 1/2 cups sifted powdered sugar
  • 2 egg yolks
  • 1 tsp grated lemon rind
  • milk

Steps
  1. Stir shortening until soft. Add sifted dry ingredients and blend.
  2. Mix in brown sugar that has lumps removed.
  3. Add milk and mix the flour until dampened. Beat 2 minutes (150 strokes to a minutes).
  4. Add eggs, beat 1 more minute.
  5. Bake 375° for 30 minutes. Spread buttercream frosting between layers on top.
  6. Frosting:
  7. Cream butter/margarine. Add salt and powdered sugar. Gradually blending as it is added. Add egg yolks, lemon zest, and enough milk to make spreading consistency.
  8. Decorate outside with almond halves.
