Snow Balls

Ingredients
  • 1 3/4cup sugar
  • 1/4 lb butter
  • 1 tall can crushed pineapple
  • 2 eggs
  • 1 cup nuts (chopped finely)
  • 1 or more (12 oz.) pkg vanilla wafers
  • 3 cups whipping cream
  • 8 oz. coconut

Steps
  1. Drain can of crushed pineapple
  2. Using mixer, cream butter, and 1 cup sugar.
  3. Add eggs - 1 at a time; mix again.
  4. Blend in nuts and drained pineapple.
  5. Line cookie sheet with paper towels. Layer pineapple mixture between 3 vanilla wafers.
  6. Let stand overnight in fridge.
  7. Whip 1 cup whipping cream until stiff, with 1/4 cup sugar, 2 oz. coconut and 2 drops vanilla. Do this 3 times (3 cups).
  8. Cover (frost) wafers with whipped cream mixture.
  9. Sprinkle remaining 2 oz. coconut on as you shape snowballs. Can place cookies in cupcake paper or in bowls with cherry with stem on top.
