Red Velvet Cake

Ingredients
  • 1 1/2 cup vegetable oil
  • 1 1/2 cup sugar
  • 2 eggs
  • 1 tsp vinegar
  • 1 tsp vanilla
  • 2 1/2 cups cake flour
  • 1 tsp soda
  • 1 cup buttermilk
  • 1 (1 5/8 oz.) red food coloring

  • Filling and Icing:
  • 1 (8 oz.) pkg. cream cheese
  • 1 box powdered sugar
  • 1 stick butter
  • 1 cup nuts (chopped)
  • 1 tsp vanilla extract

Steps
  1. Boil oil and sugar together. Blend in eggs, vinegar, and vanilla.
  2. Sift flour and soda. Add creamed mixture.
  3. Blend well. Add buttermilk and food coloring. Beat well.
  4. Bake 350° for 25 minutes in greased and floured pans. Makes 3 layers.
  5. Filling and Icing:
  6. Allow ingredients to come to room temperature. Blend well.
  7. Spread on cooled cake.
