Raised Doughnuts

Ingredients
  • 5 cups scalded milk
  • 2 cups sugar
  • 1 cup butter or margarine
  • 2 tsp salt
  • 4 eggs- beaten
  • 2 yeast cakes
  • 1 cup warm water
  • 15 cups flour (estimate)

Steps
  1. Add sugar, butter, and salt to the hot milk. When cool, add beaten eggs. Dissolve yeast in warm water and add to the mixture. Add enough flour to make a soft dough. Let it raise to double in bulk in covered bowl.
  2. WHen light, do not handle the dough, but just roll it out on a floured board to 1/4" thickness.
  3. Cut doughnuts with doughnut cutter. Cover with a cloth and let rise to 1/2" thickness.
  4. Fry in hot deep fat until cooked through and lightly browned.
  5. Remove from grease, set on paper towel.
  6. Glaze or roll in sugar immediately, or frost with chocolate frosting.
