Puddin Head Gingerbread Men

2 1/2 dozen
Ingredients
  • 1/2 cup butter (softened)
  • 1/2 cup brown sugar (packed)
  • 1 pkg regular butterscotch pudding mix
  • 1/2 tsp soda
  • 1/2 tsp cinnamon
  • 2 TBSP frozen lemonade concentrate
  • 1 egg
  • 1 1/2 cup flour
  • 1 1/2 tsp ground ginger
  • 2 cups sifted powdered sugar
  • water
  • gumdrops and other candies

Steps
  1. Cream butter, brown sugar, and pudding mix. Add egg. Beat well.
  2. Combine flour, soda, giner, and cinnamon. Stir into creamed mixture. Chill.
  3. Roll part of chilled dough out on floured surgace to 1/8" thick. Cut with 4" gingerbread man cutter. Place on ungreased cookie sheet.
  4. Bake at 350° for 6 to 8 minutes. Cool.
  5. Mix powdered sugar, lemonade concentrate and enough water for frosting. Frost gingerbread men or use pastry tube to pipe on frosting decorations.
  6. Decorate with candies if desired.
  7. Makes 2 dozen.
