Prune Cake

Ingredients
  • 1 1/2 cup cake flour
  • 1 tsp cinnamon
  • 1 tsp allspice
  • 1 tsp nutmeg
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1 cup prunes, cut fine
  • 1/2 cup shortening
  • 1 cup sugar
  • 3 eggs (seperated)
  • 3 TBSP sour cream
  • 1/2 tsp soda
  • 2 TBSP hot water

  • Fruit Topping:
  • 1/2 cup sugar
  • 1 TBSP butter
  • 2/3 cup sour cream
  • 2/3 cup pecans or walnuts (chopped)
  • 1 egg
  • 1/2 cup prunes (cut fine)
  • 1/2 cup raisins
  • 1 tsp vanilla

Steps
  1. Simmer prunes to soften.
  2. Sift flour, spices, salt, and baking powder.
  3. Combine 2 TBSP dry ingredients with prunes.
  4. Cream shortening, add sugar gradually. Beat until light.
  5. Add well beaten egg yolks.
  6. Add sour milk and soda dissolved in hot water mix thoroughly.
  7. Mix in dry ingredients and prunes.
  8. Fold in egg whites (beaten stiff).
  9. Turn into greased pan (8x8x2(
  10. Bake 350° about 50 minutes.
  11. Spread with fruit topping.
  12. Fruit Topping:
  13. Combine sugar, butter, sour cream, slightly beaten egg, prunes, and raisins.
  14. Cook about 5 minutes or until thick, stirring occasionally.
  15. Remove from heat. Add nuts and vanilla.
  16. Cool and spread on cake.
Tips
Can use vanilla icing, but not as good as fruit topping
