Steps
Using an electric mixer on medium speed, beat sugar, peanut butter, butter, vanilla, and salt until dough forms into a ball, about 2 minutes.
Roll dough into 1-in. balls and place on parchment-lined baking sheet.
Freeze until firm, about 20 minutes.
Once balls are firm, place chocolate in small measure cup and microwave in 30-second increments, stirring between each, until melted and smooth.
Line a second baking sheet with parchment paper. Working with a quarter of the balls at a time (keep remaining in freezer), dip in chocolate one at a time, letting excess drip off, and transfer to baking sheet.
If desired, sprinkle with flaky salt.
Repeat with remaining peanut butter balls.
Once chocolate has sat, if desired, decorate with melted red candy melts. Keep refrigerated until ready to serve.
