Orange Nut Fruit Jells

Ingredients
  • 1 bottle (6 oz.) liquid fruit pectin
  • 2 TBSP water
  • 1/2 tsp baking soda
  • 1 cup sugar
  • 1 cup corn syrup
  • 1 1/2 tsp orange extract
  • 10 drops orange food coloring
  • 1 tsp grated orange rind
  • 1/2 cup chopped nuts

Steps
  1. Combine fruit pectin and water in 2 quart sauce pan. Stir in baking soda.
  2. Mixture will foam slightly.
  3. Mix sugar and corn syrup in another saucepan. Place both saucepans over high heat and cook both mixtures, stirring alternately, until foam has disappeared from fruit pectin mixture and sugar mixture is boiling rapidly - 5-8 minutes.
  4. Pour fruit mixture in a slow stream into boiling sugar mixture stirring constantly.
  5. Boil 1 minute more. Remove from heat; stir in orange extract and food coloring.
  6. Add orange rinds and nuts.
  7. Pour immediately into 9x5" pan. Cool about 3 hours.
  8. Cut into 3/4" squares. Roll in powdered sugar and dip in chocolate.
  9. Stand overnight before covering.
