Oatmeal Cake

Ingredients
1 1/2 cups boiling water
1 cup oats
1/2 cup shortening
1 cup brown sugar
1 cup sugar
2 eggs (beaten)
1 1/2 cup flour
1 tsp cinnamon
1/2 tsp nutmeg
1 tsp baking soda
1/2 tsp salt
Topping:
1/2 cup butter or margarine
1 cup brown sugar
2/3 cup canned evaporated milk
1 cup coconut
1 cup nuts (chopped)
1 tsp vanilla

Steps
Pour boiling water over oats and let stand until cool.
Meanwhile, cream together shortening with sugars until fluffy. Add eggs.
Add oat and water mixture.
Sift flour with other dry ingredients and blend into creamed mixture.
Bake in greased and floured pan (13x9x2"), 350° for 35-45 minutes or until cake tests done.
Spread topping (below) on baked cake as soon as it comes out of the oven.
For topping, melt butter and add brown sugar. Blend. Add remaining ingredients and spread on baked hot cake.
Place cake under broiler for a minute or two to caramelize.
