Navel Orange Cupcakes

Ingredients
13 large Cara Cara oranges
1 box chocolate cake mix
3 eggs
1/2 cup canola oil
frosting:
3 oz. cream cheese
2 1/2 cups powdered sugar
2 tsp vanilla
1/2 tsp orange zest

Steps
Zest 1 orange and reserve. Cut oranges in 1/2; scoop out. Save rinds. Press pulp through wire strainer.
Measure 1 cup juice.
In separate bowl add cake mix, eggs, oil and juice. Mix.
Place 24 rinds into muffin tins. Pour cake batter into rinds 2/3 full. Bake. Remove from oven and cool.
Make frosting with cream cheese, powdered sugar, vanilla and zest.
Frost cupcakes.
Tips
These are served inside the orange peels! You can also top frosting with zest of orange for an extra garnish.
