Marshmallows

Ingredients
  • 1 envelope Knox gelatin
  • 1/2 cup cold water
  • 2 cups sugar
  • 3/4 cup water
  • 1/4 tsp salt
  • 1/2 tsp white vinegar
  • 2 egg whites

Steps
  1. Mix gelatin and cold water together and set aside.
  2. Boil sugar, water, salt, and vinegar together to a medium-hard ball stage (230°). When sugar mixture reaches 230°, pour slowly over gelatin and beat constantly in mixer until it builds up on beaters (~10 minutes).
  3. Beat 2 egg whites until very stiff and add to mixture.
  4. Continue beating again until it builds up on beaters (10 minutes).
  5. Pour 1/2 mixture unto 13x9" buttered pan.
  6. If desired, can add a few drops green food coloring and 1/2 tsp mint flavoring to remaining half and pour that over the top of the white layer.
  7. Chill 2-3 hours. Turn onto a damp tea towel and cut into 1" squares rolling in coconut or nuts.
