Ingredients
- 1 envelope Knox gelatin
- 1/2 cup cold water
- 2 cups sugar
- 3/4 cup water
- 1/4 tsp salt
- 1/2 tsp white vinegar
- 2 egg whites
Steps
- Mix gelatin and cold water together and set aside.
- Boil sugar, water, salt, and vinegar together to a medium-hard ball stage (230°). When sugar mixture reaches 230°, pour slowly over gelatin and beat constantly in mixer until it builds up on beaters (~10 minutes).
- Beat 2 egg whites until very stiff and add to mixture.
- Continue beating again until it builds up on beaters (10 minutes).
- Pour 1/2 mixture unto 13x9" buttered pan.
- If desired, can add a few drops green food coloring and 1/2 tsp mint flavoring to remaining half and pour that over the top of the white layer.
- Chill 2-3 hours. Turn onto a damp tea towel and cut into 1" squares rolling in coconut or nuts.
