Ingredients
- 2 cups sugar
- 3/4 cup cold water
- 1/4 tsp cream of tartar
- 2 pkgs. unflavored gelatin
- 1/2 cup cold water
- 2 egg whites
- 1/4 tsp salt
- 3 cups finely grated toasted coconut
Steps
- In heavy pan, put sugar, water and cream of tartar. Cook until soft ball stage (test in cold water).
- Meanwhile, soften gelatin in cold water and set aside. Stiffly beat egg whites in large bowl.
- Pour cooked syrup slowly over egg mixture, beating constantly. Beat in softening gelatin along with salt. Continue beating on high speed for 15 minutes.
- Pour into 9x9" pan that has been rinsed with cold water.
- Put in cool place to set up. When set, cut into pieces and roll in toasted coconut.
- Store in a covered plastic container.
