Marshmallow Squares

"What a Treat!"

Ingredients
  • 2 cups sugar
  • 3/4 cup cold water
  • 1/4 tsp cream of tartar
  • 2 pkgs. unflavored gelatin
  • 1/2 cup cold water
  • 2 egg whites
  • 1/4 tsp salt
  • 3 cups finely grated toasted coconut

Steps
  1. In heavy pan, put sugar, water and cream of tartar. Cook until soft ball stage (test in cold water).
  2. Meanwhile, soften gelatin in cold water and set aside. Stiffly beat egg whites in large bowl.
  3. Pour cooked syrup slowly over egg mixture, beating constantly. Beat in softening gelatin along with salt. Continue beating on high speed for 15 minutes.
  4. Pour into 9x9" pan that has been rinsed with cold water.
  5. Put in cool place to set up. When set, cut into pieces and roll in toasted coconut.
  6. Store in a covered plastic container.
