Mango-Banana Parfait

Ingredients
  • 1 1/2 cups greek yogurt, plain
  • 1 cup fresh mango, chopped
  • 2 ripe bananas, peeled and sliced
  • 1/2 cup toasted coconut
  • 1 cup chilled heavy whipping cream
  • 2 TBSP confectioners' sugar

Steps
  1. Place whipping cream and confectioners' sugar in a chilled glass or stainless steel bowl and whip until soft peaks form.
  2. Divide yogurt and chopped mango between 4 serving flasses.
  3. Arrange a layer of sliced banans on top of the yogurt and sprinkle with half of the toasted coconut.
  4. Spoon whipped cream over the bananas and toasted coconut. Top with remaining toasted coconut.
  5. Chill in the refridgerator until ready to serve.
