Ingredients
- 1 (16 oz.) angel food cake mix
- 3 mandarins, juiced (1/4 cup juice)
- 1/2 cup freshly squeezed lemon juice (4 lemons)
- 1 lemon zest, divided
- frosting:
- 2 cups chopped heavy whipping cream
- 2 TBSP sugar
- 1/2 cup mandarin juice
- 1/4 cup lemon juice (about 2 lemons)
- 1/2 tsp lemon zest
- 2 mandarins (peeled and sectioned)
- 1/2 cup toasted coconut
- mint sprigs, optional
Steps
- Combine mandarin and lemon juices. Make cake batter according to pkg. instructions, but substitute juice for the water.
- Stir in half of the zest. Bake according to instructions. Cool.
- Frosting:
- Beat cream until soft peaks form. Add sugar, juice, and remaining zest.
- beat until soft peaks return. Pleace cake on serving plate.
- Cover with whipped cream.
- Garnish with mandarin sections and sprinkle with coconut.
- Garnish with mint, if desired.
