Maize Xmas Fruit Cake

Time:
300° - 1.5 hours or 350° - 1 hour.
Ingredients
  • 4 cups sugar
  • 4 TBSP heaping shortening
  • 3 cups water
  • 2 lbs. raisins
  • 1 lbs. currants (or 3 lbs. raisins)
  • 6 eggs (beaten)
  • 6 cups flour (or more)
  • 2 tsp salt
  • 2 tsp cloves
  • 2 tsp nutmeg
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 2 tsp heaping baking soda
  • 1 can applesauce
  • 1 lb. mixed peel
  • 1 lb. walnuts (chopped)
  • 1 large bottle maraschino cherries
  • 2 lbs. gumdrops

Steps
  1. Boil first 5 ingredients together for 5 minutes. Let cool.
  2. When cool, add eggs.
  3. Sift flour 3 times with spices. Add to cooled mixture.
  4. Cut walnuts in large pieces.
  5. Cut large gumdrops into 3 pieces, use flour when cutting for stickiness.
  6. Cut cherries in half - save juice for cake. Add juice to cooled mixture.
  7. Mix all fruit and nuts with cooled mixture.
  8. Put into buttered loaf pan with wax paper inside bottom, tinfoil on outside.
  9. Bake 300° for 1.5 hours or 350° for 1 hour.
