Time:
300° - 1.5 hours or 350° - 1 hour.
Ingredients
- 4 cups sugar
- 4 TBSP heaping shortening
- 3 cups water
- 2 lbs. raisins
- 1 lbs. currants (or 3 lbs. raisins)
- 6 eggs (beaten)
- 6 cups flour (or more)
- 2 tsp salt
- 2 tsp cloves
- 2 tsp nutmeg
- 1 tsp baking powder
- 2 tsp cinnamon
- 2 tsp heaping baking soda
- 1 can applesauce
- 1 lb. mixed peel
- 1 lb. walnuts (chopped)
- 1 large bottle maraschino cherries
- 2 lbs. gumdrops
Steps
- Boil first 5 ingredients together for 5 minutes. Let cool.
- When cool, add eggs.
- Sift flour 3 times with spices. Add to cooled mixture.
- Cut walnuts in large pieces.
- Cut large gumdrops into 3 pieces, use flour when cutting for stickiness.
- Cut cherries in half - save juice for cake. Add juice to cooled mixture.
- Mix all fruit and nuts with cooled mixture.
- Put into buttered loaf pan with wax paper inside bottom, tinfoil on outside.
- Bake 300° for 1.5 hours or 350° for 1 hour.
