Lemon Sauce/Curd

Ingredients
  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs (beaten)
  • 1 lemon - juice and rind

Steps
  1. Melt in saucepan. Add sugar, beaten eggs, lemon juice, and rind.
  2. Cook over medium heat stirring constantly until thickened.
  3. Makes 12 servings.
  4. Wonderful over carrot or plum; date pudding.
