Lemon Bars

1 dozen
Ingredients
1/2 cup butter
1/4 cup powdered sugar - plus more for dusting
1 1/2 cup flour
2 eggs
1 cup sugar
2 TBSP lemon juice
grated rind of half a lemon

Steps
Ina large bowl, cream butter and powdered sugar. Mix in 1 cup flour.
Spread in 8x8" pan. Bake 15-20 minutes.
While crust is baking, prepare lemon layer.
Beat eggs slightly, add sugar, remaining flour, lemon juice, and rind. Mix well.
Pour over hot crust. Bake additional 18-20 minutes or until center is set.
Remove from oven and sprinkle with sifted powder sugar.
Cool slightly before cutting into bars.
Makes 1 dozen bars.
Tips
Can double recipe; baking in 9x13" pan
