Lemon Bars

"Juice and Good"

Ingredients
  • 1/2 cup butter
  • 1/4 cup powdered sugar - plus more for dusting
  • 1 1/2 cup flour
  • 2 eggs
  • 1 cup sugar
  • 2 TBSP lemon juice
  • grated rind of half a lemon

Steps
  1. Ina large bowl, cream butter and powdered sugar. Mix in 1 cup flour.
  2. Spread in 8x8" pan. Bake 15-20 minutes.
  3. While crust is baking, prepare lemon layer.
  4. Beat eggs slightly, add sugar, remaining flour, lemon juice, and rind. Mix well.
  5. Pour over hot crust. Bake additional 18-20 minutes or until center is set.
  6. Remove from oven and sprinkle with sifted powder sugar.
  7. Cool slightly before cutting into bars.
  8. Makes 1 dozen bars.
Tips
Can double recipe; baking in 9x13" pan
