Irish Soda Bread

Ingredients
  • 2 cups flour
  • 2 TBSP sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3 TBSP butter
  • 2 tsp baking powder
  • 1/2 cup raisins (optional)
  • 1 cup buttermilk
  • 1 TBSP butter (melted)
  • flour to dust

Steps
  1. Sift together flour, sugar, soda, baking powder, and salt. Cut in butter until mixture looks like fine crumbs.
  2. Add raisins (if desired). Add milk.
  3. Mix with fork until moistened. Knead gently 1 minute.
  4. Shape into ball. Place dough on greased cookie sheet or pie plate.
  5. FLatted into 7" circle (1 1/8" thick).
  6. Bake 375° for 30-40 minutes or until golden brown. Brush top with melted butter. Dust with flour.
