Ginger Molasses Cookies

4 dozen
Ingredients
2 1/2 cups flour
2 1/2 tsp grated ginger
1 1/2 tsp baking powder
3/4 tsp cinnamon
1/2 tsp salt (Kosher)
1/4 tsp nutmeg
1 1/4 dark brown sugar
1 cup (8 oz.) butter - room temperature
1/3 cup molasses
2 large eggs

Steps
Whisk together flour and spices.
Beat sugar, butter, and molasses on medium speed until combined. Add eggs one at a time.
Add flour mixture. Beat low speed.
Using small (about 1 1/2") ice cream scoop - scoop balls of dough 2" apart on parchment baking sheet.
Bake 350° for 8-10 minutes until cookies are just set around edges and slightly soft in center.
Cool on wire rack for 15 minutes.
Makes 4 dozen.
