Ginger Molasses Cookies

Ingredients
  • 2 1/2 cups flour
  • 2 1/2 tsp grated ginger
  • 1 1/2 tsp baking powder
  • 3/4 tsp cinnamon
  • 1/2 tsp salt (Kosher)
  • 1/4 tsp nutmeg
  • 1 1/4 dark brown sugar
  • 1 cup (8 oz.) butter - room temperature
  • 1/3 cup molasses
  • 2 large eggs

Steps
  1. Whisk together flour and spices.
  2. Beat sugar, butter, and molasses on medium speed until combined. Add eggs one at a time.
  3. Add flour mixture. Beat low speed.
  4. Using small (about 1 1/2") ice cream scoop - scoop balls of dough 2" apart on parchment baking sheet.
  5. Bake 350° for 8-10 minutes until cookies are just set around edges and slightly soft in center.
  6. Cool on wire rack for 15 minutes.
  7. Makes 4 dozen.
