Gay Delight Cookies

Ingredients
  • 2 cups raisins
  • 2/3 cup water
  • 1/2 cup shortening
  • 1 cup sugar
  • 2 eggs (beaten)
  • 2 cups flour
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp salt
  • 1 tsp soda
  • 1/2 tsp baking powder
  • 1 cup rolled oats

Steps
  1. Cook raisins and water together for 5 minutes.
  2. Meanwhile, cream shortening, sugar, and eggs together.
  3. Add liquid from raisins.
  4. Sift together dry ingredients.
  5. Mix together creamed mixture, raisins, and dry ingredients.
  6. Add rolled oats and mix.
  7. Drop by spoonfuls onto greased cookie sheet. Bake 375° for 8-10 minutes or until golden brown.
  9. If desired - you can add nuts and a package of chocolate chops which will make a richer cookie.
