Filled Cookies

Ingredients
  • 6 cups flour
  • 2 tsp soda
  • 2 cups shortening
  • 2 TBSP water
  • 1 tsp salt
  • 2 cups white sugar
  • 1 cup brown sugar
  • 4 eggs (beaten)
  • 2 tsp vanilla

  • Fillings:
  • 3 cups raisins
  • 1/2 cup sugar

  • 3 cups dates
  • 1/4 cup sugar
  • 1 1/2 cup water

Steps
  1. Cream shortening, sugar, and eggs.
  2. Add water and vanilla.
  3. Add dry ingredeints. Roll to 1/4" thick. Spread on filling.
  4. Roll into long rolls. Chill. Slice.
  5. Bake 350° until lightly brown.
  6. Fillings:
  7. Raisins = Grind raisins and add sugar and a small amount of water. Cook for 5 minutes. Stir constantly. Cool and spread.
  8. Dates = Chop dates and add sugar and water. Cook for 10 minutes, stirring constantly. Cool. Spread on dough.
