Filled Cookie Turnovers

Ingredients
  • 1/2 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 2 TBSP thick cream
  • 1 tsp vanilla
  • 2.5 cup flour
  • 1/4 tsp soda
  • 1/2 tsp salt

  • Fillings - Date/Fig/Raisin/Prune/Jam:
  • 2 cups fruit (2 3/4 cup uncooked)
  • 3/4 cup sugar
  • 3/4 cup water
  • 1/2 cup nuts (options)

  • Pineapple Filling:
  • 1 cup sugar
  • 1/4 cup flour
  • 1 1/2 crushed pineapple
  • 1/4 cup lemon juice
  • 3 TBSP butter
  • 1/4 tsp nutmeg
  • 3/4 cup pineapple juice

Steps
  1. Mix shortening, sugar, and eggs together thoroughly. Stir in thick cream and vanilla.
  2. Sift together flour, soda, and salt. Stir into previous mixture.
  3. Chill dough. Roll like tarts.
  4. Place on lightly greased cookie sheet. Place a rounded teaspoon of desired filling on each.
  5. Fold over like a turnover and press edges.
  6. Fillings:
  7. date, fig, raisin, prune, or jam.
  8. Cook ingredients together slowly, stirring constantly until thickened.
  9. pineapple filling: Stir together ingredients. Cook together until thickened.
