Favorite Marshmallow Squares

Ingredients
  • 2 cups sugar
  • 3/4 cup water
  • 2 egg whites
  • dash of salt
  • 2 envelopes unflavored gelatin, soaked in 8 TBSP cold water
  • 1 tsp vanilla

Steps
  1. Cook sugar and water to softball stage. Pour softened gelatin into syrup.
  2. Whip about 5 minutes or until frothy.
  3. Beat egg whites until very stiff. Gradually add to syrup mixture.
  4. Pour into shallow pan and cool.
  5. Remove from pan (dip bottom of pan in hot water to release and wuickly turn upside down on waxed paper).
  6. Cut into squares and roll in ground nuts or toasted coconut.
