Ingredients
- 1 cup milk
- 1 cup flour
- 1 cup raisins
- 1 cup carrots (grated)
- 1 cup shortening
- 1/2 cup sugar
- 1/2 cup walnuts or pecans (chopped)
- 1 tsp soda
- 1/4 tsp nutmeg
- 1/4 tsp cinnamon
- dash salt
Steps
- Mix all ingredeints. Pour into greased 2 pound coffee can or pudding mold 2/3 full.
- Snap tight fitting lid on can. Set a trivet in a large pot.
- Put covered can on trivet. Add boiling water until 1/2 way up can.
- Cover pot with lids. Adjust to low boil.
- Cook 1 1/2 hours. Remove coffee can lid. Cool.
- Remove pudding from can.
- Serve with lemon, caramel, or hard sauce.
