English Plum Pudding

Ingredients
  • 1 cup milk
  • 1 cup flour
  • 1 cup raisins
  • 1 cup carrots (grated)
  • 1 cup shortening
  • 1/2 cup sugar
  • 1/2 cup walnuts or pecans (chopped)
  • 1 tsp soda
  • 1/4 tsp nutmeg
  • 1/4 tsp cinnamon
  • dash salt

Steps
  1. Mix all ingredeints. Pour into greased 2 pound coffee can or pudding mold 2/3 full.
  2. Snap tight fitting lid on can. Set a trivet in a large pot.
  3. Put covered can on trivet. Add boiling water until 1/2 way up can.
  4. Cover pot with lids. Adjust to low boil.
  5. Cook 1 1/2 hours. Remove coffee can lid. Cool.
  6. Remove pudding from can.
  7. Serve with lemon, caramel, or hard sauce.
