Ingredients
  • 2 1/3 cup sugar
  • 2/3 cup white corn syrup
  • 1/2 cup water
  • 1 tsp vanilla
  • 2 egg whites
  • 1/4 tsp salt
  • 3/4 cup nuts or coconut

Steps
  1. Separate eggs; put whites into large mixing bowl.
  2. Combine sugar, syrup, and water in saucepan. Stir and cook over low heat until sugar dissolves.
  3. Cover and cook 1 minute; then, uncover and cook without stirring until brittle stage (265°).
  4. When almond done, beat egg whites and salt until stiff - about 2 minutes.
  5. Slowly pour in syrup mixture, continuing to beat until no longer shiny.
  6. Add vanilla. Veat until mixture will hold shape. If too thick - beat in a few drops of boiling water.
  7. Stir in nuts or coconut as desired.
  8. Drop at once by teaspoonfuls onto waxed paper. Let cool and set up.
  9. If desired, top with cherries, orange peel, or nuts.
Tips
Recipe can be doubled. Easier to handle a single batch.
Can also use food coloring (green or red).
