Cream Puffs

Ingredients
  • 1 cup water
  • 1/2 cup butter
  • 1 TBSP sugar
  • 1/2 tsp salt
  • 1 cup flour
  • 4 eggs

Steps
  1. Bring water, butter, sugar, and salt to a rolling boil.
  2. Add flour all at once.
  3. Beat vigorously with wooden spoon until mixture leaves side of pan and makes a ball.
  4. Quickly add, one at a time and beating each time until smooth, 4 eggs. Continue beating until smooth.
  5. Drop by 3/4 teaspoonfuls on lightly greased cookie sheet.
  6. Bake for 15 minutes at 400° and then reduce heat to 325° and bake for 20-25 minutes longer.
  7. Pierce with sharp knife and let air out.
  8. Remove tops to fill.
