Cream Puff Filling

Ingredients
  • 2 cups milk
  • 2 TBSP flour
  • 3 TBSP cornstarch
  • 1/2 tsp vanilla
  • 2/3 cup sugar
  • 1 egg + 1 yolk (or 3 yolks)
  • 1/2 pint heavy whipping cream

Steps
  1. Mix flour, cornstarch, sugar, and salt. Add enough cold milk to make a paste.
  2. Scald rest of milk - blend with paste.
  3. Stir constantly until thickened. Let cool 15-20 minutes.
  4. Blend wit hbeaten eggs and cook a little longer; add vanilla.
  5. Add about a half pint of whipping cream and fold in.
  6. Cook in double broiler.
  7. Cool, then fill cream puffs.
