Cool Rise White Bread

Ingredients
5 1/2 cups flour
1 yeast (1 TBSP)
1/2 cup warm water
3 TBSP shortening
1 3/4 cups warm milk
2 TBSP sugar
1 TBSP salt

Steps
Measure flour into bowl. Put yeast in mixing bowl with warm water to dissolve.
Add milk, sugar, salt, and shortening. Stir.
Add 2 cups flour, beat with beaters.
Then, add 1 cup more flour and beat by hand 150 strokes. Add remaining flour - enough to make a soft dough which leaves sides of bowl.
SHape dough into ball, knead by hand 10 minutes. Let dough rest 20 minutes in covered bowl.
Punch down - divide in half. Roll to bread down gas bubbles.
Form loaf and brush with oil.
Refrigerate 2 to 24 hours. Remove - stand at room temperature 10 minutes.
Bake 400° 30-40 minutes
Remove from pans immediately to cool - brush tops with margarine.
