Cool Rise White Bread

Ingredients
  • 5 1/2 cups flour
  • 1 yeast (1 TBSP)
  • 1/2 cup warm water
  • 3 TBSP shortening
  • 1 3/4 cups warm milk
  • 2 TBSP sugar
  • 1 TBSP salt

Steps
  1. Measure flour into bowl. Put yeast in mixing bowl with warm water to dissolve.
  2. Add milk, sugar, salt, and shortening. Stir.
  3. Add 2 cups flour, beat with beaters.
  4. Then, add 1 cup more flour and beat by hand 150 strokes. Add remaining flour - enough to make a soft dough which leaves sides of bowl.
  5. SHape dough into ball, knead by hand 10 minutes. Let dough rest 20 minutes in covered bowl.
  6. Punch down - divide in half. Roll to bread down gas bubbles.
  7. Form loaf and brush with oil.
  8. Refrigerate 2 to 24 hours. Remove - stand at room temperature 10 minutes.
  9. Bake 400° 30-40 minutes
  10. Remove from pans immediately to cool - brush tops with margarine.

ALWAYS grease baking pans
