Clam Chowder

Ingredients
  • 2 cans clams (save juice)
  • 1 onion - chopped
  • 1 cup celery - diced
  • 2 cups potatoes
  • 3/4 cup butter
  • 3/4 cup flour
  • 1 qt. half & half (or 1 pt. half & half and 1 pt. milk)
  • 1 tsp. sugar
  • 1/2 carrot (optional)

Steps
  1. Cover onions, celery, and potatoes with water and clam juice. Cook unitl almost tender.
  2. Add salt and pepper.
  3. In another pan, melt butter, and flour.
  4. Add half & half and then pour over veggies and serve hot.
  5. Note: can use hash browns in place of potatoes.
  6. Serve with crackers or fresh bread.
