Caramel Turtles

2 1/2 pounds
Ingredients
2 cups sugar
2 cups light corn syrup
2 cups light cream
1/2 tsp salt
3/4 cup evaporated milk
6 TBSP butter
pecan halves

Steps
In heavy saucepan, mix sugar, corn syrup, cream, and salt.
Bring to boil and cook to softball stage. Slowly, so boiling doesn't stop, add evaporated milk and butter.
Continue cooking until about 238° (247° at sea level).
Arrange pecans in clusters on wax paper on baking sheet.
Drop spoonfuls of caramel onto each pecan cluster. Cool.
Dip candies in chocolate; if desired.
Makes 2 1/2 pounds of candy.
