Cajun Cake

Ingredients
  • Cake:
  • 1/2 stick butter (melted)
  • 2 eggs
  • 1 1/2 cup sugar
  • 2 cups flour
  • 2 tsp soda
  • 1 (16 oz.) can crushed pineapple (not drained)

  • Topping:
  • 1 1/2 sticks butter
  • 1 cup sugar
  • 1 (5 oz.) can evaporated milk
  • 1 cup angel flake coconut
  • 1 cup chopped nuts

Steps
  1. Sift together flour and soda. Combine all ingredients together.
  2. Pour into greased 9x13 pan. Bake 30 minutes at 350°.
  3. For topping, combine butter, sugar and milk in saucepan. Stir until boiling. Boil 1 minute.
  4. Add coconut and nuts. Pour over hot cake.
  5. Cut cake into squares
Tips
For juicer cake, can use more evaporated milk (up to 20 oz. total)
