Butter Mints

Ingredients
  • 1 cup water
  • 2 1/2 cups sugar
  • 5 TBSP butter
  • 8 drops peppermint oil
  • 3 drops food coloring

Steps
  1. Place water and sugar in pan. Heat until sugar is dissolved, stirring. Do not allow to boil.
  2. Add butter in pieces - allowing to melt on sides of pan to prevent sugar crystals. Cook to 248°.
  3. Pour onto chilled buttered surface. (Cools faster if poured in a "S" pattern)
  4. Cool until it can be handled. Add coloring and flavor before pulling.
  5. Pull until pull and ropes do not hold together. Cut into pieces.
  6. Place in tin to ripen for 24 hours.
