Berry Trifle / Marscapone

Ingredients
  • 24 oz. raspberries, divided
  • 3/4 cup sugar, divided
  • 16 oz. marscapone
  • 4 TBSP orange juice
  • 2 cups whipping cream
  • 1/2 cup powdered sugar
  • 2 pound cakes
  • 18 oz. blueberries

Steps
  1. Add 12 oz. raspberries to a bowl. Toss them with 1/4 cup sugar. Set aside.
  2. Mix marscapone with 1/2 cup sugar and orange juice. Set aside.
  3. Whip cream with powdered sugar until almost firm. Mix the marscarpone mixture with the whipped cream.
  4. Cut the pound cake into 8 slices each and place in trifle bowl.
  5. Then add the sugared raspberries, half the mousse, and half the blueberries and blackberries.
  6. Repeat layering with remaining ingredients.
  7. Makes 10-12 servings.
