Banana Cake

Ingredients
  • 1 1/2 cup white/all-purpose flour
  • 1 cup wheat flour
  • 1 2/3 cup sugar
  • 1 1/2 tsp baking powder
  • 1 1/4 tsp soda
  • 1 tsp salt
  • 2/3 cup shortening or 1 square + 4 TBSP margarine
  • 1/3 cup buttermilk
  • 1 1/4 cup mashed bananas (3-4)
  • 1/3 cup milk
  • 2 eggs
  • nuts (chopped)

Steps
  1. Sift together flours, sugar, baking powder, soda, and salt. Add shortening/margarine, buttermilk and bananas. Beat 3 minutes.
  2. Add milk and then eggs. Beat 2 more minutes.
  3. Add nuts and pour into greased and floured dripper pan.
  4. Bake 350° for 40 minutes. Freeze if desired for later use.
  5. Frost when ready to serve.
  6. Frosting: use buttercream or cream cheese with powdered sugar and vanilla
Tips
Excellent cake for picnics. Very rich and delicious - keeps well!
To make buttermilk, use 2/3 cup milk and add 2 TBSP vinegar or lemon juice to sour.
