Banana Cake

Ingredients
1 1/2 cup white/all-purpose flour
1 cup wheat flour
1 2/3 cup sugar
1 1/2 tsp baking powder
1 1/4 tsp soda
1 tsp salt
2/3 cup shortening or 1 square + 4 TBSP margarine
1/3 cup buttermilk
1 1/4 cup mashed bananas (3-4)
1/3 cup milk
2 eggs
nuts (chopped)

Steps
Sift together flours, sugar, baking powder, soda, and salt. Add shortening/margarine, buttermilk and bananas. Beat 3 minutes.
Add milk and then eggs. Beat 2 more minutes.
Add nuts and pour into greased and floured dripper pan.
Bake 350° for 40 minutes. Freeze if desired for later use.
Frost when ready to serve.
Frosting: use buttercream or cream cheese with powdered sugar and vanilla
Tips
Excellent cake for picnics. Very rich and delicious - keeps well!
To make buttermilk, use 2/3 cup milk and add 2 TBSP vinegar or lemon juice to sour.
