Ingredients
- 1 1/2 cups sugar
- 1 cup yogurt or low fat sour cream
- 1/2 cup margarine
- 2 eggs
- 1 1/2 to 2 cups mashed ripe bananas (3 large - 4 medium)
- 2 tsp vanilla
- 2 cups flour
- 1 tsp salt
- 1 tsp baking soda
- Topping:
- 1/4 cup butter
- 1 tsp vanilla
- 3 tbls milk or half & half
- 2 cups powdered sugar
Steps
- Combine and beat sugar, yogurt, margarine, eggs
- Add bananas and vanilla to mixture and combine
- Add flour, salt and baking soda and only just combine and don't overwork mixture
- Spray sheet pan and bake in oven at 350 degrees for 18-25 minutes
- For the frosting cook butter until light brown, add vanilla, milk, and powdered sugar and beat until incorporated.
- Once sheet cake is cooled add frosting and spread evenly.
