Banana Bars

Ingredients
  • 1 1/2 cups sugar
  • 1 cup yogurt or low fat sour cream
  • 1/2 cup margarine
  • 2 eggs
  • 1 1/2 to 2 cups mashed ripe bananas (3 large - 4 medium)
  • 2 tsp vanilla
  • 2 cups flour
  • 1 tsp salt
  • 1 tsp baking soda

  • Topping:
  • 1/4 cup butter
  • 1 tsp vanilla
  • 3 tbls milk or half & half
  • 2 cups powdered sugar

Steps
  1. Combine and beat sugar, yogurt, margarine, eggs
  2. Add bananas and vanilla to mixture and combine
  3. Add flour, salt and baking soda and only just combine and don't overwork mixture
  4. Spray sheet pan and bake in oven at 350 degrees for 18-25 minutes
  5. For the frosting cook butter until light brown, add vanilla, milk, and powdered sugar and beat until incorporated.
  6. Once sheet cake is cooled add frosting and spread evenly.
  7. Enjoy!
