Baked Rice Pudding

Ingredients
  • 1/2 cup rice
  • 1 quart milk - 2 cups
  • 1/2 cup raisins
  • 1/3 cup butter
  • 2 eggs - beaten
  • dash nutmeg
  • 1 tsp vanilla
  • 1/4 tsp salt
  • dash cinnamon

Steps
  1. Cook rice. Add raisins and butter.
  2. Combine eggs, vanilla, salt, and milk. Add to rice mixture with remaining ingredients.
  3. Pour into greased 1 1/2 quart baking dish.
  4. I usually use a glass loaf pan. Can sprinkle cinnamon and nutmeg on top.
  5. Bake at 325° for 30-45 minutes or until set.
  6. Serve warm!
