Ingredients
- 1 1/2 cups boiling water
- 1 cup chopped apricots
- 3/4 cup sugar
- 1 egg (beaten)
- 2 1/4 cups sifted flour
- 1 tsp baking powder
- 1/2 tsp salt
- 2 tsp baking soda
- 1 cup nuts (chopped)
- 1 TBSP melted shortening
- 1 tsp vanilla
Steps
- Pour water over apricots and let stand 10 minutes.
- Add sugar to egg.
- Sift together dry ingredients.
- Add dry mixture and apricot mix alternatively to to egg + sugar.
- Add shortening and vanilla.
- Bake 1 hour at 350° in greased and floured loaf pan.
