Apricot Nut Bread

Ingredients
  • 1 1/2 cups boiling water
  • 1 cup chopped apricots
  • 3/4 cup sugar
  • 1 egg (beaten)
  • 2 1/4 cups sifted flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp baking soda
  • 1 cup nuts (chopped)
  • 1 TBSP melted shortening
  • 1 tsp vanilla

Steps
  1. Pour water over apricots and let stand 10 minutes.
  2. Add sugar to egg.
  3. Sift together dry ingredients.
  4. Add dry mixture and apricot mix alternatively to to egg + sugar.
  5. Add shortening and vanilla.
  6. Bake 1 hour at 350° in greased and floured loaf pan.
