Applesauce Fruit Cake

Ingredients
  • 2 1/2 cups flour (sifted)
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 2 TBSP corn starch
  • 3 TBSP cocoa
  • 1 1/2 cup applesauce
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp allspice
  • 1/2 tsp cloves
  • 1/2 cup shortening
  • 2 tsp soda
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/2 cups raisins (soak in water)
  • 1 tsp nutmeg
  • 1 cup cherries
  • 1 1/2 c nuts (chopped)
  • 2 tsp cinnamon
  • 2 cups fruit mix

Steps
  1. Mix dry ingredients, add liquid and shortening. Mix, add applesauce, flavoring, eggs, etc.
  2. Mix and beat well with mixer.
  3. Add fruit and nuts stirring with wooden spoon.
  4. When thoroughly mixed, put into greased and floured loaf pans and bake for 1 hour at 350° or until done.
  5. Test with a toothpick in the middle of the cake at end of hour - usually takes more than 1 hour to bake. When done remove from oven and cool.
  6. Wrap in wax paper, cover with tinfoil. Let age 2-3 days, then freeze.
  7. This is a dark fruitcake as it has cocoa in it!
