Applesauce Cake

Ingredients
  • 2 cups sifted all purpose flour
  • 2 eggs
  • 2 TBSP cocoa
  • 3/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp cloves
  • 1/2 tsp nutmeg
  • 1 1/2 cups applesauce
  • 1/2 tsp allspice
  • 1/2 tsp soda
  • 1 1/2 tsp baking powder
  • 1/2 cup shortening
  • 1 1/2 cup sugar
  • 1 cup raisins
  • 1 cup snipped dates or walnuts (optional)

Steps
  1. Sift together dry ingredients. Coat fruit or nuts with flour.
  2. In large mix master bowl, cream shortening on #7 speed - 2 minutes.
  3. Then, add eggs 1 at a time while beating 2 minutes.
  4. Add flour mixture alternately with applesauce while beating on #2 speed.
  5. Scrape bowl as necessary. Beat only until blended - about 4 minutes.
  6. Turn into greased and flour dusted 13x9x2" pan.
  7. Bake 350° for 30 to 50 minutes or until done.
  8. Cool. Frost with your favorite frosting.
