Any Old Fruit Cake

"Easy to make, Economical, Delicious"

Ingredients
  • 1 quart bottled fruit (old or dark) - apricot is my favorite
  • 4 tsp baking soda
  • 1 tsp salt
  • 1 cup margarine
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 tsp cloves
  • 1 tsp nutmeg
  • 2 tsp cinnamon
  • 4 cups flour

Steps
  1. Mix fruit and juice in blender for one minute. Add remainder of ingredients.
  2. Add chopped nuts if desired.
  3. Put into greased and floured pan (9x13)
  4. Bake 350 for 45 minutes.
  5. Frost with powdered sugar, 1 pkg. cream cheese, milk, and vanilla OR can frost with
  6. 1/2 cube margarine or butter
  7. 1/2 cup brown sugar
  8. 1/4 cup canned milk
  9. Bring to a boil. Pour over 2 1/2 cups powdered sugar. Thick enough to frost cake.
Tips
Apricot is my favorite fruit, but any canned fruit will work.
I have served as sheet cake at weddings.
