Almond Joy

Ingredients
  • 1 1/3 cup light corn syrup
  • 1 cup sugar
  • 1/2 cup water
  • few drops almond flavoring
  • dash salt
  • 1 pkg. (12 oz.) coconut
  • whole almonds
  • 1 pkg. (12 oz.) milk chocolate
  • 2 TBSP. shortening

Steps
  1. Cook corn syrup, sugar, and water to firm ball stage (212°).
  2. Add flavoring and salt. Stir in coconut while hot.
  3. Pour into buttered 8x8" pan. Cool.
  4. Cut into squares. Put 1 almond on top of each square and dip in chocolate melted with shortening.
  5. Cool on wax paper.
  6. Makes: 60 pieces
